    Xanterra’s legacy of hospitality leadership began in the 1800s with Fred Harvey, a talented visionary who recognized weary travelers’ need for quality restaurants along the route of the Santa Fe Railroad. Fred Harvey devised an ingenious telegraph system to notify restaurant staff of train arrivals in advance, allowing his kitchens to feed hundreds of passengers within moments after a train pulled into a station.

    Today, Xanterra runs 63 restaurants -- ranging from full-service restaurants to quick-service outlets and cafes -- in locations across the United States. The company’s talented chefs create fresh, flavorful meals that are served in some of the most beautiful settings on Earth.

    Diners at the Grand Canyon Lodge can watch the sun set over the majestic canyon. From the dining room at the Old Faithful Lodge in Yellowstone National Park, guests can see the famous geyser erupt. The terrace at the Zion Lodge looks out on the dramatic cliffs.

    Cuisine at Xanterra is more than just healthy for diners – it is healthy for the environment, as well. Xanterra has made a commitment to serving sustainable cuisine. Sustainable cuisine is the practice of using products from sources that are grown, harvested, processed, packaged and distributed with the least amount of environmental impact. Xanterra has led the way in adding items including Green Mountain fair trade coffee, Marine Stewardship Council-certified fish, Conservation Beef and Niman Ranch Pork to its menus.
